I guess the time has really come… Summer is officially over as of Monday. I spent some of today in the sunshine savoring the last of it. We have been enjoying this spiked version of lemonade all summer long- mostly on our porch during sunset, hence the nickname. The honey and basil add a natural, sweet twist to it… its really yum!

You should be able to find fresh figs at the market now and for the next few weeks. I have been stuffing them with one of my very favorite cheeses- Humboldt Fog (which I describe as “goat cheese to the next lev”).  This snack couldn’t be easier to make and is delicious both raw and roasted. For the raw version, simply cut the tip off a fresh fig then cut it in half. Add a bit of the cheese and wrap with a long thin slice of prosciutto.

I make a combination of wrapped and un-wrapped for my vegetarian friends.

Make an X with your knife, add the cheese, then wrap with proscuitto. Then roast in the oven at 375 for 10 minutes or until the cheese is gooey and the proscuitto is crispy. So yum!

Summer is not over till its over says the Margarita Queen!

I’m not really sure how it got to be mid August already but I’ll be enjoying every last minute of summer that I can and I will do so by making these recipes this weekend! The truth is, I tried watermelon margaritas early on in the Summer, but didn’t really perfect the recipe until recently. (The shark watermelon came in handy last week!) The earlier ones I tried were way too watery and its def a bit of a more involved process to make this particular flavor- the result is worth the effort though as this cocktail is so refreshingly summer. I ended up with a variation of this recipe (ironic that its a post from one of my fave shopping sites)… What my earlier recipes were lacking was enough lime, and its the lime that makes a true Margarita Queen margarita! (I should have known.)

Love the look of this watermelon punchbowl (Thanks Martha!), but arrange and handle this with care… this would be a risky setup to put out for self service at a party. I set this up for our guests as a visual, but prepared the drinks myself.

Watermelon Margarita
Makes about 4 to 6 margaritas

2 cups fresh seedless watermelon chunks (reserve a few good chunks for garnish)
1 cup fresh lime juice (about 6 to 8 limes)
1/2 cup fresh orange juice (1 orange, I add some pulp too)
1/4 cup agave
1 1/2 cups premium silver tequila
1/2 cup triple sec
Coarse Salt

Cut a fresh, seedless watermelon in half and scoop out the fruit. Drain any extra water from the watermelon as you go. (If you are making the watermelon punchbowl, reserve the scooped out half and add the scalloped design to the edges using a sharp knife). Place watermelon, lime & orange juice, agave and tequila into a blender and pulse to combine. Stir and serve over ice (with or without salt) with watermelon and/ or lime garnish.

My friend Amanda started calling these “Guacamole Boats” and it stuck. Wait does everyone call them that?

The pairing of margaritas and guacamole is not “brain surgery” but I love, love, love guacamole and love serving it this way! Basically one “boat” serves two people very nicely and people get a kick out of the presenation. I love the chunkiness of the Barefoot Contessa’s recipe but changed it up a bit. Actually, every time I make guac, its a little bit different but here’s the basics…

Chunky Guacamole “Boats”
serves 6 to 8

2 to 3 ripe avocados (I always buy an extra in case one is bruised or not ripe enough)
1 tablespoon freshly squeezed lime juice
1 jalapeño, minced, seeds removed (optional)
1/4 cup small-diced red onion
1/2 garlic clove, minced
1 small to medium plum tomato, seeded, and small-diced
1/8 to 1/4 cup fresh cilantro, chopped
salt and pepper to taste

Slice, scoop, slice/ mix…

Add the diced tomatoes, onion, garlic, cilantro and jalapeño to bowl and mix. Cut the avocados in 1/2, remove (but reserve) the pits, and scoop the flesh out of their shells (reserve shells- AKA: boats) into the bowl. Add the lime juice and using a sharp knife, slice the avocados in the bowl until they are cut into smaller pieces but still chunky. Add salt and pepper to taste. Add pits back to bowl until serving- this will prevent your guacamole from oxidizing and turning brown. When ready to serve, remove pits, add guacamole the avocado “boats”, serve with chips and enjoy!

Whenever I make guacamole, I add some of the extra ingredients to our favorite salsa (this is Salpica Chipotle Garlic Salsa)- it adds freshness and flavor!
