I guess the time has really come… Summer is officially over as of Monday. I spent some of today in the sunshine savoring the last of it. We have been enjoying this spiked version of lemonade all summer long- mostly on our porch during sunset, hence the nickname. The honey and basil add a natural, sweet twist to it… its really yum!

For a delish snack pairing, try these Humboldt Fog stuffed figs…

You should be able to find fresh figs at the market now and for the next few weeks. I have been stuffing them with one of my very favorite cheeses- Humboldt Fog (which I describe as “goat cheese to the next lev”).  This snack couldn’t be easier to make and is delicious both raw and roasted. For the raw version, simply cut the tip off a fresh fig then cut it in half. Add a bit of the cheese and wrap with a long thin slice of prosciutto.

I make a combination of wrapped and un-wrapped for my vegetarian friends.
If making for a cocktail party, make a combination of wrapped and un-wrapped for my vegetarian friends.
Make an X with your knife, add the cheese, then wrap with proscuitto. Then roast in the oven at 375 for 10 minutes or until the cheese is gooey and the proscuitto is crispy. So yum!
