Rainbow & Cloud Cookie (Here Comes the Sun)

Its funny the little things that can cheer you up or be a mood changer. “Here Comes the Sun” has always been one of those songs for me and this rainbow and cloud cookie is definitely the same. On a particularly stressful end of day this past summer, even though my long work day was done, I mixed up some fresh colors and decided to ice this cookie. Beth Braman of CopperGifts had posted an image of our Shell Cookie Cutter on Facebook and asked everyone to guess the shape and a ‘rainbow with cloud’ was one of the guesses (genius!)… While I was icing the rainbow I got to thinking about how happy clouds are fluffy and marshamallows are fluffy and before I knew it the cookie was done and I was pretty cheered up.

Since we have been so much fun with cookies that have been “coming to life”, I was inspired to do a googly eyed version of the rainbow cloud cookie as well…

Start with blank shell cookie...

Just like in the video, use a food doodler to draw in your cloud, then fill in the rainbow colors...

Ice the cloud in white, then while the icing is still wet,  add sugar googly eyes...

While cloud icing is still wet, sprinkle with sanding sugar...

Let sanding sugar set for at least an hour (or more). Brush off any excess sugar then pipe on small smiley mouth
