Happy Happy Hour: Whiskey Sours & Black Bean Hummus
As Memorial Day weekend quickly approaches, and KF, Spot, Hope and I are doing the “we want sun dance”, I’m happy to share one of my favorite warm weather cocktail and appetizer combinations…
Lots of people may not think of the whiskey sour as a “warm weather” drink but as an avid campaigner for using fresh juice in drinks, this classic cocktail made with fresh orange and lemon juice poured over an ice filled glass really fits the warm weather bill for me. I used the Whisky Sour recipe (did you know it can be spelled both ways- Whisky or Whiskey?) posted online by How2Heroes (one of my favorite recipe resources) and added a bit more juice- only because the original recipe is a bit strong and I wanted to have more than one!
2 oz Rye Whiskey (I used Jack Daniels)
1 oz Fresh Squeezed Lemon Juice
¾ oz simple syrup (equal parts sugar & water)
1 oz Fresh Squeezed Orange juice (for the pink hue you see below, use cara cara oranges)
“Good” ice (not from your fridge trays, unless you have fancy ones for this purpose)
Orange slice & cherry to garnish (I skipped the cherries till I can find good fresh ones in the market)
Combine all ingredients in a shaker filled with ice. Pour into ice filled glass. Garnish with generous orange slice and cherry.
I love hummus as a appetizer. Its a healthier alternative to other dips and works nicely with chips and/ or veggies. This delicious black bean hummus is such a great alternative. (You may remember it as “Dark Side Hummus” in my Star Wars movie party post) I always have a container of roasted garlic in the fridge. I make it at the start of the week and its a delicious addition to almost any recipe. I am totally obsessed with olives so I have served this snack both with and without. Save any leftover hummus for a snack the next day!
BLACK BEAN ROASTED GARLIC HUMMUS
(adapted from allrecipes.com)
makes about 8 servings
3 to 5 cloves roasted garlic
1 (15 ounce) can black beans; drained and rinsed
2 tablespoons lemon juice
2 tablespoons olive oil
1 1/2 tablespoons tahini
3/4 teaspoon ground cumin
1/2 teaspoon salt
1/4 teaspoon cayenne pepper
1/4 teaspoon paprika
Garnish with 8 to 10 olives (I love a few cured black Sicilian olives with this)
For serving… pita chips, terra chips, tortilla chips, crudite
Add all ingredients to the bowl of a food processor. Process until smooth, scraping down the sides as needed. Add additional lemon juice, cayenne, or olive oil to taste. Garnish with olives (optional) and serve with chips.
