Pass the milk please!

I could not let the 100th Birthday of the Oreo cookie go by without a post! My brother and I grew up eating Oreos and I am pretty sure I can make an easy connection with my love of milk and cookies to the Oreo.

KF is a peanut butter freak! He LOVES chocolate too so I baked him these chocolate peanut butter sandwich cookies for his birthday last year and ever since this recipe has made its way into regular rotation.

I’m happy to share the recipes I used to make these… The chocolate cookie is from Martha Stewart’s Cookie Book. I have used it many times before and it’s listed on Martha’s website with my LoveBug cookies. Its a delicious, crumbly chocolate cookie…

For the peanut butter filling I used Martha’s peanut butter whoopie pie filling. Since KF really loves peanut butter I added a bit extra peanut butter and took away some butter…

These cookies work well baked into a heart shape too!

Peanut Butter Filling:

2/3 C. + 2 Tbsp Natural, Creamy Peanut butter

7 Tbsp Unsalted Butter at room temperature

3/4 C. Confectioners Sugar

Pinch of Salt

Combine all the filling ingredients using the paddle attachment of a Kitchen Aid or a hand held mixer on low. It will be creamy but a little stiff . Once your chocolate cookies cool, gently spread and pat the filling onto one side of each cookie, then carefully sandwich with another chocolate cookie “lid”.

Pour glass of cold milk, a glass or red wine (trust me!) or a mug of hot coffee and enjoy!
