I could not let the 100th Birthday of the Oreo cookie go by without a post! My brother and I grew up eating Oreos and I am pretty sure I can make an easy connection with my love of milk and cookies to the Oreo.
KF is a peanut butter freak! He LOVES chocolate too so I baked him these chocolate peanut butter sandwich cookies for his birthday last year and ever since this recipe has made its way into regular rotation.

Peanut Butter Filling:
2/3 C. + 2 Tbsp Natural, Creamy Peanut butter
7 Tbsp Unsalted Butter at room temperature
3/4 C. Confectioners Sugar
Pinch of Salt
Combine all the filling ingredients using the paddle attachment of a Kitchen Aid or a hand held mixer on low. It will be creamy but a little stiff . Once your chocolate cookies cool, gently spread and pat the filling onto one side of each cookie, then carefully sandwich with another chocolate cookie “lid”.
Pour glass of cold milk, a glass or red wine (trust me!) or a mug of hot coffee and enjoy!
